Job Summary/Basic Function

The primary responsibility of this position is to prepare food for cooking including: removing items for cold storage and meal ingredient areas, panning items to be baked, preparing items to be grilled or fried etc. It also includes under direction from the chef and on-duty cook, to finish food by grilling, baking, frying, boiling, etc. using industrial kitchen equipment, maintaining adequate food levels during service times and quality food standards, food safety and sanitation, assisting in cleaning the kitchen and for high quality customer service through face-to-face interaction with our guests.
1. Support the mission and vision of Concordia College and demonstrate the competencies as defined for this position.
2. Prepare food for residential dining, catering, contract services, and any other events as directed by the chef and on-duty cook – 30%
3. Maintain quality standards in food handling and preparation and standards of sanitation and safety as established by local, state, and federal health officials – 20%
4. Maintain adequate food levels during service times and store leftovers as directed and maintain equipment and work areas in neat, clean, and orderly conditions – 20%
5. Provide training and give direction to cook’s helpers in the production of food and perform other job related duties as assigned by the chef and on-duty cook – 10%
6. Work with student employees, co-workers, and management in service to our customers and assist with student employee recruitment and retention – 10%
7. Be able to engage our customers with an attitude of willingness and dedication to serve. – 10%

Minimum Qualifications

• Qualified Applicants will have a High School Diploma/GED;
• At least 3-6 months of experience;
• Basic employment skills: reading, oral and written communication, and performing simple arithmetic;
• Broad range of knowledge with cooking techniques; food preparation techniques;
• Broad range of technical skills with industrial kitchen equipment with experience with some of the following: oven, steam kettle, steamer, deep fat fryer, grill, pasta cooker, and a good knowledge of knife skills;
• ServSafe certificate or similar food safety course certificate, or pass ServSafe exam within the first year of employment;
• Ability to use industrial kitchen equipment as well as ability to weigh, measure and mix ingredients according to recipes using various kitchen equipment and utensils;
• Ability to work in a fast-paced kitchen environment which include temperature extremes and noise, as well as long periods of standing and walking, and kneeling, reaching, squatting and bending;
• Communication skills to give directions to student employees and work with other staff to ensure that proper procedures are being followed;
• Ability to engage our customers with an attitude of willingness and dedication to serve;
• Ability to work with a diverse group of people.
